This recipe for Thai beef skewers with fried asparagus is a variation on skewers, a tasty, multi-bite oriental treat on a stick. This smoky dinner was a perfect accompaniment to the South African tall horse pinotage, which has ripe fruit aromas, silky tannins and hints of coffee and chocolate, and is recommended for use with grilled meats.
INGREDIENTS
For beef skewers:
- 500 g beef tenderloin
- 3 chopped garlic cloves
- handful of chopped fresh coriander
- 4 tbsp. soy sauce
- 4 tbsp. toasted sesame oil
- 4 tbsp lemon juice (preferably green)
- 2 tbsp. liquid honey
- 1 a.s. ground pepper mixture
- sesame seeds (for sprinkling)
- about 20 bamboo skewers
For fried asparagus:
- 250 g fresh green asparagus
- 1 tbsp. 2 tablespoons roasted sesame oil
- 1 tbsp. soy sauce
- 0,5 tbsp. ground pepper mixture
- sesame seeds (for sprinkling)

PREPARATION
First, I cut the beef tenderloin into thin strips. The ones that were too big I cut in half again. On skewers soaked in water, I arranged the sliced pieces of meat.
I made a marinade for the meat: I mixed sesame oil, soy sauce, honey, lemon juice, pepper and chopped garlic with chopped coriander. I poured this marinade over the meat on skewers and marinated it for about an hour.
I peeled the asparagus thinly, cut off the tips and used toothpicks to tie it four by four to make it easier to handle during cooking. I drizzled the asparagus with sesame oil and soy sauce and sprinkled it with pepper.
I also used the same marinade to cover the clean onion leaves. I marinated the vegetables for about half an hour.
I cooked the beef skewers for 2 minutes on each side over direct heat, i.e. over hot coals. The vegetables were similarly cooked, and I turned them over several times during the baking process. I sprinkled the skewers and the vegetables with sesame seeds.

P.S. I have already tried making similar skewers with pork tenderloin, and they were also very tasty.
