Mexican Beef Stew with Beans is the perfect recipe for an indispensable dish when you're craving something spicier.Make this delicious, hearty stew and don't forget to sprinkle it liberally with your favourite greens.
INGREDIENTS
- 0,8-1 kg beef
- 1-2 shallots
- 1 yellow sweet pepper
- 2-3 garlic cloves
- 15 g ginger root
- 2-3 tbsp olive oil
- a pinch of crushed cumin seeds
- a pinch of cinnamon
- a pinch of dried oregano
- chilli powder to taste
- 0,5 tbsp flour
- salt
- about 400 ml beef stock
- 1 can (400 g) skinless tomatoes
- 1 can (400 g ) canned beans
For serving:
- chopped parsley leaves
PREPARATION
Heat a tablespoon of oil in a large frying pan and add the washed and drained meat, cut into strips. Fry it for about 4-5 minutes until nicely browned. Then turn it out onto a plate.
Add a little more oil to the pan where the meat was cooking and add the peeled and chopped onions. Fry, stirring, for about 5-6 minutes. Then add the rinsed and chopped peppers. Fry for another 3-4 minutes.
Then add the peeled and finely chopped ginger root, the spices (except oregano) and the flour to the onions and peppers. Stir-fry over a low heat for about 2-3 minutes. Stir in the broth a little at a time. Shake in the tomatoes and add the oregano. Simmer over a medium heat for about 10 minutes.
Now return the meat to the pan, cover with the lid. Simmer the meat over a low heat for 1,5 hours until tender. 15 minutes before the end of the simmering time, add the drained beans. Taste and add salt or spices if still missing.
