Grilled pizza with bacon, caramelised onions and blue cheese on the COBB grill

And the portable touring grill can also be used to cook a crispy and delicious pizza! 

Number of servings: 2

For the pizza you will need COBB Pan Premier.

Ingredients for the pizza base:

1 cup of flour
1 pinch of salt
1 tsp. instant yeast
1 tbsp. oil
1/3 cup warm water

Pizza toppings / ingredients:

Bacon
1 finely chopped onion
2 tbsp. brown sugar
100 g blue mould cheese
100 g grated mozzarella cheese
1 can of canned chopped/grated tomatoes

Preparation:

First of all, Cobb grill, then, after the coals/briquettes have been lit, place the Cobb pan and close the lid. Leave for 5 minutes to allow the pan to heat up.

In a bowl, mix the flour and salt. In a separate bowl with warm water, dissolve the yeast and stir in the oil. Stir this wet mixture into the flour, then turn the dough out onto a clean surface and knead it by hand for a good 10 minutes until it is smooth and sticky. Place the dough in a lightly oiled bowl, cover it with a damp towel and leave it in a warm place for about 30 minutes to rise.

While the dough is rising, you can move on to the condiments. At first Cobb fry the bacon in a frying pan until crispy. Then set aside the crispy bacon and fry the sliced onions in brown sugar in a hot pan until caramelised. This will take about 10 minutes. Put the onions in a separate bowl as well.

Take the dough, knead it slightly and form a round pizza base in the pan. Brush the dough with tomato puree, sprinkle with mozzarella cheese, blue cheese, crispy bacon and caramelised onions.

Place the pan on the Cobb grill, cover with the lid and leave to cook for about 20-25 minutes.

Serve the pizza immediately, while it is still hot and crispy! Enjoy!
