Grilled pineapple with dessert mint and honey sauce by BBQ World Champion Peter de Clercq

Grilled pineapple in a different way - grilled with a dessert sauce of mint, honey and cherry beer and served with ice cream.

The pineapple is recommended to be grilled with the lid on, but can also be cooked on an open grill with a slight modification of the recipe*.

For 4 servings:

  • 1 pineapple
  • 150 ml of water
  • 50 g dessert sauce (recipe below)
  • Ice cream (to taste)

It is recommended to prepare the sauce in advance. It will need:

  • 200 g honey
  • 1 cinnamon stick
  • 2 star anise
  • 2 cardamoms
  • 1 l of water
  • 500 ml cherry beer
  • Handful of fresh mint

Preparation of the dessert sauce: Melt the honey, mix with the chopped herbs and spices, dilute with water and cherry beer. Allow to cool and then stir in the mint. Strain through a sieve. Store in a jar in the fridge.

Dessert preparation:

  • Mix the water with the dessert sauce. Do not cut the pineapple, just scoop out a few deeper cavities at the bottom.
  • Keep the pineapple in a plastic bag while you syringe the dessert sauce into the pineapple. Strain the sauce and bake the pineapple for about an hour.
  • Then cut the grilled pineapple in half and cut it into 1 cm strips. Serve with ice cream.

*Tip: If you grill the pineapple on an open grill, cut the strips first, add the sauce and then grill.
