Classic bruschetta and gourmet bruschetta. Easy-to-prepare recipes for Italian toast - by BBQ champion Andreas Rummel. How long will you last? Just 20 minutes.
Classic bruschetta
You will need:
- 12 slices of bruschetta (French bread) (approx. 1 cm thick)
- 2 garlic cloves
- 4 tomatoes
- 2 pieces of mozzarella cheese
- 15 basil leaves
- Salt
- Freshly ground pepper
- 3 tbsp. olive oil
Preparation:
Grill the bruschetta slices on both sides. Rub garlic on one side of the bruschetta.
Finely chop the tomatoes, mozzarella and basil. Mix in a bowl, sprinkle the mixture with salt and pepper and drizzle with olive oil.
Spread the mixture on the roasted bruschetta and cook - it was perfect.
Bruschetta with guacamole and corn
You will need:
- 1 corn cob
- 50 g unsalted butter
- 12 slices of bruschetta (French bread) (approx. 1 cm thick)
- 3 avocados
- 1 garlic clove
- 1 lime juice
- Tabasco sauce (to taste)
- Salt
- Freshly ground pepper
Preparation:
Brush the corn cob with butter and bake for about 10 minutes on indirect heat at 180 °C. Turn over several times until the grill marks are visible.
While the cob is cooking, also toast the bruschetta slices on the grill.
Cut and peel the avocados and place them in a bowl. Peel and crush the garlic clove. Stir the lime juice into the mixture, Tabasco sauce and a pinch of salt. Stir until the mixture is smooth.
Spread the guacamole directly on the roasted bruschetta. With a sharp knife, cut the corn off the cob, sprinkle with salt and pepper and place on top.
If you want a more hearty snack, add more tomatoes and herbs.
