A feast is not a feast without a special steak! For Christmas, New Year or a special occasion, we offer you an extraordinary dish - beef sirloin steak. And to make it really special, we've chosen a recipe from a well-known South African chef. Why SA? Because that's where the COBB grill that many of you have seen and appreciated comes from.
Although the recipe is designed for mobile COBB grills owners, but it can also be used by owners of any other grill or even those who cook in their home kitchen.
Accessories required:
- COBB cobblestone charcoal tablet (1 piece)
- COBB deep frying pan (Wok)
- COBB Corrugated Grill Plate (Grillde+)
- COBB cooking grill
Ingredients:
- 1,5 - 2 kg beef fillet
- 2 tbsp. ground Cumin (kupini) KNORR
- 2 tbsp cayenne pepper (kupini)
- 1 tbsp dried chilli flakes (coarse pieces)
- 1 tbsp. black pepper, freshly cracked
- 1 tbsp. unground coriander seeds
- 1 tbsp. dried thyme KNORR
- salt flakes FIOR DI SALE (can be substituted with plain salt)
- 100 g butter
- a few sprigs of rosemary
- 3-4 large garlic cloves, lightly crushed
Preparation:
- Tie the beef cut-out with string to make a uniform, even shape. Drain the meat with a kitchen paper towel and leave to dry.
- Prepare the spice mixture: mix together the cumin, peppercorns, chillies, black pepper, coriander seeds, thyme and salt. Sprinkle it evenly over the meat.
- While the meat is marinating, add the COBB CobbleStone coconut charcoal tablet with fire burner and wait a few minutes until the charcoal tablet turns grey and no longer emits any smoke.
- On COBB grill Place a deep frying pan on the BBQ and add the butter. When the butter is warm and lightly browned, add the meat.
- Add the garlic and rosemary sprigs to the butter next to the meat. Brown the meat well; baste it occasionally with butter.
- When browned, remove the deep frying pan and add to the COBB grill Place a ribbed (Griddle+) plane and on top of it a sparse grill (elevation). Do not pour off the butter - you will need it later for the vegetables.
- Place the meat on the grill and cover the grill with the lid. Grill for 30-45 minutes, depending on the degree of doneness you want.
- After removing, leave to rest for 10 minutes before carving. Your meat will be much juicier!
- Serve with sauce and vegetables. Delicious!
